Some cheeses use mold as part of the growth process of the cheese. Take care to start each test under controlled conditions, including how much mold you start with for each sample. Learn the different classes of cheese, their materials, and how they are made. Look at how natural or how artificial the materials are, and whether they are so over-pasteurized that everything in them is killed. In other words, treat it as a science project.

can you use a french cheese? because french cheeses would grow mold pretty quickly, seeing as they are already aged. All you probably need to do is let it sit out for a while... in my french class last year, my french teacher was trying to expose us to french foods. One time the cheese was moldy. we didn't eat it.
