Learn the different classes of cheese, their materials, and how they are made. Look at how natural or how artificial the materials are, and whether they are so over-pasteurized that everything in them is killed. In other words, treat it as a science project.

can you use a french cheese? because french cheeses would grow mold pretty quickly, seeing as they are already aged. All you probably need to do is let it sit out for a while... in my french class last year, my french teacher was trying to expose us to french foods. One time the cheese was moldy. we didn't eat it.
