Most substances expand as they get hotter. A mercury thermometer shows the expansion of mercury versus temperature.
A bimetal thermometer has a strip of two metals fused together. One metal expands more than the other causing the strip to bend. The strip is made in a spiral so it twists a shaft as it bends, and a pointer on the shaft points to the temperature.
A thermocouple has two metals bonded at a point. It generates a voltage depending on the temperature difference from the bond to the free ends. Thermocouples are used for very precise measurements because the voltage is known to six digits or so, and the reading can be adjusted for the ambient temperature.
Electronic thermometers often use some characteristic of a semiconductor to read temperature.

Heat is the measurement of the movement of particles. So, as a liquid heats, it expands and gets "faster". This expansion iswhat makes the liquid rise or fall.
